why is postgres being removed form SXCE?

It is Postgres 8.1 that was removed. Both 8.2 and 8.3 are still there - check for SUNWpostgr-82* and SUNWpostgr-83* packages.
When will the 'pkg image-update' command download this image?

marty,
'pkg image-update' is used in Sun' Indiana (aka OpenSolaris) distribution. SXCE is a different distribution (made by Sun as well). I think you may get a better answer at indiana-discuss@opensolaris.org mailing list.
That said, Indiana usually lagging behind SXCE by a week or so.
